Low carb chicken cauliflower vindaloo

Easy quick dishes like this curry is nice to have in your back pocket. This whole meal came together in under 15 mins

Ingredients

2 chicken breast, sliced

1 tbs coconut oil

1 med onion, sliced

3-4 tsp vindaloo curry paste

1 head cauliflower, cut into florets

1 cup sliced snow peas

1 can coconut milk

1 tsp chicken stock powder

1/2 cup Greek yoghurt (optional)

Directions

1Fry onions in the coconut oil with curry paste for 3-4 mins.

2Add chicken. Fry for another 3-5 mins.

3Add cauliflower and coconut milk.

4Cover and let simmer a few minutes over med heat.

5When cauliflower is softened add snow peas and chicken stock powder.

6Stir in yogurt to thicken sauce if desired.
