After grinding my own almond flour I decided to make some pancakes this morning.
Low carb almond flour pancakes
1/2 cup almond flour
1/4 tsp baking powder
2 tsp Splenda (or liquid equiv)
1 tbs melted butter
Pinch of salt
1-3 tbs half and half
Mix all ingredients except half and half together. Add half and half until you get the right consistency. Fry in 1 tbs butter with a little veg or olive oil. There won’t be many bubbles like normal pancakes but they do come out pretty fluffy. Serve with sugar free maple syrup.
