Mini low carb meatballs

Had a late night craving for a little meaty snack. These quick and easy mini meatballs hit the spot. I made a bunch and will keep them in the fridge for snacking on over the next few days. 🙂


Low carb mini meatballs

1 lb ground pork
1 tbs dried onion flakes (soaked in 2 tbs hit water)
2-3 tbs almond flour
2-3 tbs heavy cream
1-2 tsp sriracha
1 clove grated garlic
Salt and pepper

Soak almond flour in the heavy cream for 10-20 minutes. Mix all ingredients into pork. Form into mini meatballs and place in a low frying pan. When all balls are in the pan turn up the heat to medium and begin to brown the balls. You might need to drain off some fat depending on how lean the pork is.

Serve with some ranch dressing.
