Lowcarb chicken cannelloni recipe

My experimenting with soya wrappers continue with these delicious cannelloni. Yum!


Low Carb Chicken Cannelloni

5 5x6in soya wrappers (cut from a larger sheet)
1 large cooked chicken breast, diced
4 oz cream cheese
1 cup grated mozzarella
1/4 cup Alfredo Sauce
1 egg
2 cloves garlic, minced
1/4 tsp salt
1/4 tsp pepper
pinch nutmeg
1 tsp each chopped parsley and chives

1 cup tomato sauce
1 cup alfredo sauce
1/2 cup grated mozzarella
1-2 tbs grated parma

Preheat oven to 350F. Grease a casserole dish. Mix all the filling ingredients together. Take 2-3 tbs of filling and place along the edge of one of the wrapper squares. Roll up, and place in the casserole. Repeat for the remaining wrappers, filling the casserole. Top with tomato sauce, then Alfredo sauce. Put the cheeses on top of the sauce. Bake for 30-40 mins (I turn on the broiler for the last 3-5 mins to brown the top).
