I visited my local herb and spice store today. Found this interesting spice blend I’ve seen before on TV called Zatar. I’ve heard some good things, had chicken breast at home and thought let’s give it a whirl. I was pleasantly surprised this tasted delicious! Kind of like sesame seeds with Shake-n-bake. Yum!

Zatar roasted chicken breast

3 bone in, skin on chicken breasts
2-3 tbs Zatar spice blend
Salt to taste

Preheat oven to 450F. Sprinkle chicken with Zatar blend. Sprinkle with salt. (optional: add a few dabs of butter or bacon grease on each chicken breast for extra crispy skin). Place chicken on a rack over a cookie sheet and roast for 35-45 mins or until a internal temp of 165F is reached. Let rest for 5 mins or so before serving.

I served this with a simple side of fried cabbage and sugar snap peas.
