Steak with mushrooms and onions has been a long time favorite of mine. Here is my low carb version. So yummy!

Low carb steak and mushrooms in a creamy gravy sauce

The Steak
1 steak (I used a round steak)
1 tsp House seasoning
Salt and pepper to taste
2 tbs bacon fat

Pound the steak with the tenderizing site of a meat mallet (not necessary if using a more tender cut). Season with house blend and extra pepper. Heat a frying pan on med high (closer to high, you want a hot pan). Add bacon far. Fry the steak for 2-3 mins per side (for med rare) and set aside to rest.

The mushrooms and onions
4-6 small king oyster mushrooms, sliced
One small onion sliced
3 cloves garlic, sliced
1 tbs bacon fat (or butter)
Salt and pepper to taste

Heat frying pan on med high. Add bacon fat. Add mushrooms and fry for 1-2 mins. Add garlic and onions with some salt and pepper. Fry for 4-5 mins till golden brown.

The Sauce
1/2 beef stock cube
1/2 cup water
2 dashes worcestershire sauce
2 tbs heavy cream
1/2 tsp pepper
2-3 shakes of xanthan gum

Add water and stock cube to a small sauce pan. Heat to dissolve the cube. Add w sauce and bring to a simmer. Sprinkle with 2-3 shakes of xanthan gum (it is a non starch thickener that I keep in a salt shaker, a little goes a long way so be careful). Stir briskly with a wire whisk to prevent lumps. Remove from heat and let thicken for a minute to see if it is thick enough. In not add more xanthan, if too thick add a little water. Add in cream and pepper. Taste and adjust seasoning.

My beef stock cube was a little salty so I added a 1/2 tsp of splenda to counter that.

Serve steak with mushrooms on top and drizzle with cream sauce. Eat with a delicious salad!
