Low carb pizza

Just wanted a quick snack tonight so I threw a few lc things together. And voila pizza! this recipe makes a personal pizza. Double/triple for larger pizzas


Low carb pizza crust

2 tbs almond flour
2 tbs flax meal
2 tbs grated parmesan (the cheap stuff)
1 egg

Mix all ingredients together. Pour onto a piece of parchment paper and form into a circle about a 1/4 thick. I use a second piece of parchment to help me shape and flatten it. Place crust in the microwave and cook for 60-80s until crust is set.

Top the pizza crust with whatever sauce/toppings you like. I used lc tomato sauce, cheddar cheese and pepperoni slices, with a sprinkle if chives.

Place pizza in a preheated oven set to broil for 5-7 mins till cheese is melted and toppings brown.
