Low Carb Pizza Recipe

Yesterday was Wrestlemania and I wanted some good snacks/food to eat during the show.  I decided on Pizza and Chicken Fingers (recipe to follow).  The Pizza was good, but a little soggy, but I think the changes I have in the recipe below should correct that.

2 cups “riced cauliflower”
2 cups nacho cheese blend
2 eggs
1 tsp oregano
1 tsp garlic powder

Place the riced cauliflower in a tea towel or a couple strong paper towels and ring out as much water as possible (I didn’t do this step and my crust was soggy).  Mix cauliflower with the rest of the ingredients and press into a lined pizza pan (you can line it with parchment paper or non-stick foil).  Bake at 425F for 15-20 mins.  Allow to cool Cauliflower LowCarb Pizza Crust

2-3 tsp Alfredo Sauce
Broccoli florets
Sliced chorizo
1 cup cheese
1/2 small onion sliced thin

Spread sauce on crust, sprinkle with cheese, add remaining toppings.  Broil pizza for 5-8 mins on high until cheese is melted and broccoli looks cooked.
