Low carb Philly cheese steak

I had a craving for a cheese steak for a few days. My local supermarket had a sale on some round steak so I jumped on it and made this for lunch today


Low carb Philly cheesesteak

1 ~1/2 lb steak (any steak will do)
1 med red onion sliced thin
1-2 cups sliced mushrooms
Salt and pepper to taste
2 tbs butter
2 tbs veg oil
Two low carb burger buns

Thinly slice the steak and sprinkle with salt and pepper. Heat a cast iron on high for a few minutes to get hot. Add a tbs oil and 1 tbs butter. Immediately add the sliced mushrooms (so the butter doesn’t burn). Fry for 5-8 minutes till cooked and browned. Remove from the pan and set aside. Let the pan come back to temp for a few more minutes and add the remaining butter, oil and thinly sliced steak. Fry for ~5 mins till cooked through. Add the onions after the first minute.

Place a price of provolone cheese on the bottom bun. Add the steak and a handful of mushrooms. Top with a second slice of cheese. Place the sandwich under the broiler for a couple minutes until the cheese melts. Add the top bun and serve.
