Continuing with my Wrestlemania snack feast here are my yummy chicken fingers.  I based this recipe off Bowulf on youtube, I just tweaked some of the seasonings.

Low Carb Chicken Fingers

1 cup grated Parmesan cheese (the can/bulk stuff is good)
1/2 cup coconut flour
1 tsp pepper
1/2 tsp cayenne pepper
1/2 tsp powdered oregano
1/2 tsp garlic powder
1/2 tsp onion powder

Mix everything together and store in a sealed container.  Makes more than needed in the recipe

Chicken Fingers:
2 chicken breasts, cut into fingers
1 egg
2-3 tbs half and half (or cream)

Beat the egg with the half and half in one bowl.  Put about 1/2 cup of the coating in a second bowl.  Dredge the chicken fingers into the coating mixture, then into the eggs then back into the coating.  Fry at 360F for 7-10 mins till cooked through.

I mixed up some mayo and sriracha to make a spicy dip.  Yum!!
