Low carb Asian chicken legs

Eating a low carb diet can be challenging, especially at those times when you want to grab something quick or don’t feel like cooking. I have found its helpful to have some grab and go meals/snacks ready. These chicken legs fill that bill. They are also very affordable when bought on sale.


Low Carb Asian Chicken Legs

Low carb Asian chicken legs

10-12 chicken legs
4-5 cloves garlic
1/2 inch ginger, grated (from frozen)
1 green onion
3-4 tbs soy sauce
Small drizzle sesame oil
1/2 tsp sriracha hot sauce

To help the chicken cook faster and absorb as much flavor as possible, aggressively cut into the legs three times on each side (6 cuts in total) right to the bone. I learned this from Jamie Oliver and it also help the skin render and go nice and crispy.

Place the garlic, onion and ginger into a mortar and bash it up with the pestle. You can add a little kosher salt to help the process. Add hot sauce, soy sauce and sesame oil. Pour this mixture over the chicken. Ideally you would marinate the chicken for a few hours or over night. I didn’t have time so I put it directly into my cast iron pan, marinate and all and cooked it all together

Preheat the oven to 450 F. Place chicken with marinade in a cast iron pan, or and oven proof pan, and bake for 45-60 mins. Turning the legs periodically durning that time.

Once cooked these legs are great reheated throughout the week with a nice green salad on the side, or served along side fried cauliflower rice.

    For dinner tonight I am making chicken wrapped in prosciutto stuffed with basil. I have to make it low carb for my mom and the only appetizer I can find that is low carb is egg drop soup, an asian dish. So there are three things I need help with.

    1. A low carbohydrate side dish or appetizer or soup
    2. If you can’t help me with that I cant to know how I can make my chicken asian.
    3. How can I make egg drop soup similar to the chicken.

      There are tons of low carb appetizers or side dishes. Mashed cauliflower, roasted broccoli, green salad are all good sides. For an appetizer you could stuff some mushrooms or jalapeño peppers with ground pork and top with some parm. cheese. Keep checking back here and I’ll post more side dishes and apps.
